Pork Adobo

Pork Adobo This dish is one of the most typical of Peruvian cuisine, which originated in the south of the country, specifically in the department of Arequipa; made with various condiments, chicha, red pepper sauce, vinegar, oregano, salt, pepper and chopped pork meat.


  • 08 pieces of pork
  • 01 large onion, diced
  • 1/2 ground hot pepper
  • 2 tbsp. of red pepper sauce
  • 1/2 cup of chicha
  • 01 tsp. oregano
  • 1/2 tsp. Cumin
  • salt and pepper to taste
  • Oil c / n.
  • 1kg. Sweet potatoes peeled and cut into large pieces
  • 1 1/2 tbsp. sugar
  • 1 cinnamon rajita


Put potato pieces in a large pot so that they are not on top of each other, sprinkle the sugar and cook with little water and cinnamon stick over low heat.

Marinate the pork with salt, pepper, cumin, garlic, oregano, chicha and crushed hot pepper

In a pan fry in hot oil well onion and then the red pepper sauce, then add the marinated meat, check the salt. Serve with white rice and sweet potatoes.
