Pachamanca
Pachamanca This is a typical dish from the desert. It consists of lamb, pork, meat, potatoes, sweet potatoes, and a tamale. First, one has to heat rocks on the floor using firewood. When they are hot enough, the food is placed inside a sac and buried in the hot rocks. The food has to be repeatedly checked to see when it is done because the temperature is unstable.
Ingredients:
For the lamb
- Lamb2 kg
- Marinade240 ml for each kg of meat
- Yellow Goose1
- Native potatoes8, medium size
- Yellow sweet potato4
- Beans500 g
- Banana leavesAs needed to wrapp the meat
For the marinade
- Muña1 small bunch
- Paico1 small bunch
- Rosemary1 sprig
- Oregano1 small bunch
- Chicha de jora500 ml
Preparation
Cut the lamb into pieces and marinate them in a mixture of chopped herbs and chicha de jora.Preheat the oven, place the lamb wrapped in banana leaves on an oven tray with the other ingredients.Roast the products on a medium-low temperature for between 3 and 4 hours.
