Inchicapi chicken

Inchicapi chicken soup is the most popular in the Peruvian Amazon. A version of inchicapi that instead of preparing chicken is done with motelo, which is a type of turtle in the region.  Inchicapi chicken is a dish that is used to prepare for the holidays and special occasions like birthdays, baptisms and marriages.


  • Six dams chicken
  • ½ kilo of peeled peanuts
  • And / 4 kilo of corn flour
  • ¼ cup cilantro or coriander sacha
  • 1/2 kilo of cassava cut into pieces
  • 1 medium red onion, chopped
  • 1 teaspoon oregano
  • 2 sweet peppers (not bite) chopped
  • 2 teaspoons minced garlic
  • 3 liters of water
  • Salt and cumin


In a pot with water, boil dams chicken for about an hour. When there is formed a reserve some broth. Add in a blender the reserved broth, peeled peanuts, cornmeal, crushed garlic, chopped cilantro, chopped onion, salt and cumin, 2 sweet peppers and blend. Then drain all the previous preparation in the boiling pot with chicken dams. Add the previously peeled cassava pieces for about 30 minutes, stirring constantly with a spoon.

Oregano is added, the taste is rectified and continue cooking until the yuccas are well boiled (soft).

It served in bowl ensuring that each portion has a piece of cassava and chicken. It is customary to accompany this soup with chili cocona.
